WHAT IS SOUS VIDE?

Sous vide — French for “under-vacuum” — is an innovative cooking technique in which food is vacuum sealed and slow-cooked in water at constant precise temperatures until it’s perfectly cooked. Sous vide maximizes the taste, texture, and aroma of food. The cooking technique was pioneered in France by Dr. Bruno Goussault, now chief scientist at Cuisine Solutions.
